Pancetta is essentially an Italian style bacon. Firstly we select the right type of cut, we only use the loin of the pork (with a short tail). 

Our aim is to reduce the amount of fat and still maintain a traditional product. 

Our Pancetta is then salted down by hand using traditional methods dating back many years and generations including selected spices from our 

traditional family recipe. The Pancetta is cured slowly over 6 weeks in our drying room at ambient temperatures taking in the characteristics of our fabulous Canberra Region.
